Untold Brewing & Clandestine Kitchen Come to Derby Street

Two popular South Shore businesses have partnered to create a new Untold Brewing and Clandestine Kitchen collaboration in Hingham’s Derby Street. Founder and President Matt Elder and co-owner Mike Dyer of Untold Brewing, the famed Scituate craft brewery have teamed up with Hingham resident Courtney Doyle. Doyle is the proprietor of Clandestine Kitchen, a local and scratch-made meal delivery service, which recently won Best Personal Chef Services in the 2022 Best of South Shore awards.

The new 2,300 square foot taproom and restaurant will feature brews by Untold Brewing and farm-to-table seasonal foods by Clandestine Kitchen, Courtney and Culinary Director, Anne Stenfors.

We got a sneak peek preview. Here's what you need to know before doors officially open later this week, including some culinary beer and food highlights:

The new space, which is managed by WS Development, is family-friendly and great for casual get togethers. Untold will offer a diverse selection of beers on draft as well as small-batched releases that are brewed onsite. There will be four to five flagship beers always available and the rest of the taps will be rotating with new releases, approximately two to three new beers a week. “We pride ourselves on offering a wide variety of beer styles at all times and enjoy helping customers find one that they like,” adds Matt Elder, Founder and President of Untold Brewing.

In terms of the food menu, several items will be mainstays, while other items will rotate locally and seasonally, and everything is small-batched and made fresh. The food menu includes hearty grain bowls, soups, elevated salads, flatbreads, dips, and a thoughtful kids menu. The menu also includes plenty of dairy- and gluten-free items. There will always be something new to explore on all menus.

Founder and Owner of Clandestine Kitchen, Courtney Doyle shares, “We’ve developed a fiercely loyal fan base here on the South Shore that appreciates our commitment to clean, healthy meals that utilize seasonal, local ingredients. Our menu will build upon our favorite recipes and offer exciting new items designed to pair with Untold’s beer. Our culinary team, led by well-known local chef Annemarie Stenfors, has designed a delicious menu of comfort foods, healthy options, and special limited releases that will keep you excited to come back time and time again.” Courtney currently serves 500 weekly home delivery meals to her steadfast customers, and is excited to showcase her talents to incoming guests with her savory and satiable bites, and is eternally grateful to her team.

Think of the space as a unique choose-your-own-adventure, and go-at-your-own-pace casual experience. Guests can sip and dine at a table, hang out at the bar or by the 60 foot drink rail, or relax on couches. Beer can be ordered at the bar and food can all be ordered from your phone with a QR scanning code. Guests will receive text message updates, and food can be picked up at the pick-up window. Food can be enjoyed onsite in the casual elegant space. Or you can choose to grab-and-go, with convenient to-go items situated near the pick up window packaged in compostable materials, including freshly prepared salads and handhelds. Takeaway four-pack beers and other beverages will also be available for purchase. The site will be a great spot for an easy lunch to relax and unwind post-shopping or on a work break, a gathering hub, or a convenient place to grab what you need for takeaway; a true destination in Derby Street.

“Hospitality is at the core of everything we do,” states Mike Dyer, Co-Owner and Vice President of Untold Brewing. “We remind ourselves that guests may not remember every sip of the beer they enjoyed, or every bite of their meal, but they will remember their experience and the feeling that they had in our taproom. With intent, we’ve created a really special place in Hingham and cannot wait to share it with the community.”

Here’s what we sampled:

She Makes Waves - a hazy IPA with hints of tropical fruit and Layers on Layers - a hazy IPA with citrus fruit notes of grapefruit, mango, and peach. Get ready to head on vacation with these brews.

Untold Beer Cheese with Pretzel Bites - addicting bite-sized Eastern Standard Provisions pretzels served with a homemade cheese sauce made with Untold's Pale 143 beer. A winning combination.

Classic Cheese Flatbread - a family favorite for everyone. Topped with classic homemade marinara sauce, mozzarella, ribbons of fresh basil, and served on gluten free crust upon request.

Elevated Caesar Salad - it really is elevated. Each ingredient is nestled in a specific vessel, so your salad stays fresh. Dig into organic romaine, freshly shredded parmesan cheese, cucumber, tomato, charred sweet corn, and a housemade vegan tahini ranch dressing. Flavorful, healthful, and delicious.

Loaded Wagyu Beef Hot Dog - if you love hot dogs, you will dig this elevated classic; a loaded Wagyu beef dog topped with an assortment of colorful  pickled vegetables of onions, cauliflower and string beans, and served with homemade tangy, grainy mustard and ketchup. A healthy take on an indulgent hotdog.

CK Creamy Tomato Soup + Grilled Cheese - a gourmet, oozing grilled cheese composed of an assortment of sharp cheeses and served with a creamy basil blended San Marzano tomato soup. A decadent treat for an autumn lunch.

Purple Deviled Eggs - feast your eyes on these vibrant purple deviled eggs, which are tangy and creamy, and filled with a dijon remoulade, and topped with chives and paprika.

Cauliflower bites - these crispy pieces of organic cauliflower are roasted and topped with herbs and served with a vegan tahini ranch and a hot honey buffalo sauce. A crowd favorite and a healthy version of your favorite, addicting snack.

Applewood Smoked BLTA - sandwiched between thick local Fireking Baking Co. sliced bread is crispy Applewood smoked bacon, juicy tomato, herb mayonnaise, and a hearty serving of  creamy, rich guacamole. Wholesome and filling.

Spice Rubbed Chicken Wings - these plump and tender roasted chicken wings are finished with a dry-rub and served with a housemade tahini ranch and hot honey buffalo sauce. Perfect for snacking and brews.

The project was almost two years in the making, yet came together organically; construction took just 95 days thanks to the Camford Property Group expertise. Untold fans may notice some similarities to the new space, including a school desk situated on top of a beer cooler. Acclaimed South Shore artist, Jess Hurley Scott, created the giant Kraken triptych and other artwork on the iconic blue walls that share the same shade of color as the Scituate schoolhouse walls. The restrooms, equipped with changing tables, feature a playful wallpaper print of UFOs, aliens, and Bigfoot.

Doors open officially November 11 and we can’t wait to return.
